This is the original coconut macaroons recipe, it is made of sweet desiccated coconut, condensed milk, sugar, eggs, butter and vanilla extract.
The recipe makes for 9 cookies but you can easily double the recipe.
Applesauce is an interesting idea! I was under the impression that coconut macaroons were exclusively a filipino thing. Filipino style coconut macaroons are sweet confections that are made out of dried coconut strips mixed with eggs, butter and condensed milk which are baked then served like mini muffins.
